1. Pot Roast

Often made in a slow cooker, the pressure cooker delivers this savory, hearty meal of tender beef over vegetables in just 25 minutes of cook time. Cooked in wine with bay and rosemary, this pot roast has a rich, herbal flavor you’re going to love.

Ingredients

  • 3 lbs chuck roast
  • 2 tbsp. vegetable oil
  • 1 medium onion, peeled and thinly sliced
  • 1 carrot peeled, cut into 3-inch pieces
  • 1 stalk celery, diced small
  • 8 baby red potatoes
  • 1 tbsp. tomato paste
  • 1 1/3 cups beef broth
  • 1 bay leaf
  • 1 sprig rosemary
  • 3 cloves garlic, peeled and minced
  • 1/4 cup red wine

Instructions

  1. First, season the roast with salt and black pepper.
  2. Place the inner pot in the pressure cooker and put the vegetable oil in the inner pot. Press the MEAT button. Then, place the beef in the oil and cook until it is lightly browned on all sides.
  3. Remove the meat from the cooker and set aside.
  4. Next, place the vegetables in the inner pot and cook for 2 or 3 minutes.
  5. Add the tomato paste and continue cooking for 1 minute. Add the bay leaf, rosemary, wine, and beef broth.
  6. Now, place the roast back in the pot.
  7. Place the lid on the cooker. Lock the lid and set the pressure release valve to closed.
  8. Press the CANCEL button.
  9. Reset the MEAT button mode and set the timer to 25 minutes.
  10. Once the timer reaches 0, the cooker will automatically switch to WARM.
  11. Set the pressure release valve to open and allow the steam to release completely.
  12. Then, remove the lid and serve.

Ingredients

  • 2 lbs ground beef, 85% lean
  • 4 cups crushed tomatoes
  • 1/2 cup beef stock
  • 1 large onion, peeled and diced
  • 1/3 cup dried red beans (soak beans overnight)
  • 1/3 cup dried black beans (soak beans overnight)
  • 1/3 cup dried navy beans (soak beans overnight)
  • 1/4 cup chili powder
  • 1 tsp. cumin
  • 1 tsp. ground coriander
  • 1 tbsp. sea salt
  • 1 tbsp. crushed red pepper flakes
  • 1 tbsp. sugar
  • 2 tbsp. grapeseed oil
  • Sour cream for garnish
  • Cheddar cheese for garnish

Instructions

  1. Place the inner pot in the electric pressure cooker and place the oil in the inner pot. Press the MEAT button, then add the beef and onions. Cook for 5 minutes.
  2. Next, add the spices and cook for 1 minute.
  3. Add the remaining ingredients.
  4. Place the lid on the pressure cooker. Lock the lid and set the pressure release valve to closed.
  5. Press the CANCEL button.
  6. Press the SOUP button and then set the timer for 20 minutes.
  7. Once the timer reaches 0, the cooker will automatically switch to WARM.
  8. Set the pressure release valve to open, and after the steam has completely released, remove the lid.
  9. Garnish with sour cream and shredded cheddar cheese and serve hot.

 

3. Baby Back Ribs

Although more associated with the BBQ pit than a pressure cooker, pressure cooked baby back ribs are a treat. Ingredients

  • 3 racks baby back ribs
  • 4 tbsp. granulated garlic powder
  • 2 tbsp. onion powder
  • 1 tbsp. Cumin
  • 1 tbsp. Coriander
  • 2 cups smoky barbecue sauce
  • 1 small onion, peeled and diced
  • 1 cup of water

Instructions

  1. In a small bowl, thoroughly blend the garlic powder, onion powder, cumin, and coriander to create a seasoning blend.
  2. Cut the racks in half so that they can easily fit in the pressure cooker. Season each rack evenly with the seasoning blend.
  3. Place 1 cup of water in the pressure cooker.
  4. Add the ribs side by side, then add the diced onion and evenly pour the BBQ sauce over the ribs.
  5. Place the lid on the pressure cooker. Lock the lid and set the pressure release valve to closed.
  6. Press the STEW button and then set the timer for 30 minutes.
  7. Once the timer reaches 0, the cooker will automatically switch to WARM.
  8. Set the pressure release valve to open, and when the steam is completely released, remove the lid.
  9. Optional: Have your grill preheated to high and place the ribs in a single layer on a foil-lined baking sheet. Broil the ribs on each side until browned well, about 5 minutes per side.
  10. Brush the ribs with the barbecue sauce from the pot.
