Ingredients:

  • 120g butter, softened
  • 150g white sugar
  • 2 eggs
  • 4 ripe bananas, mashed with 1 tablespoon lemon juice
  • 240g cake flour
  • Pinch of salt
  • 5 ml baking soda
  • 30 ml milk
  • 1 teaspoon vanilla essence

Instructions:

  1. Preheat oven to 350˚F (180˚C)
  2. Line and grease a loaf pan.
  3. Cream butter and sugar.
  4. Add eggs one at a time.
  5. Add banana and lemon juice. Mix together.
  6. In another bowl, mix dry ingredients and stir into the creamed mixture alternately with the milk and vanilla.
