Pressure-cooked Beef Stroganoff Recipes

1. Classic Beef Stroganoff
This is a classic beef stroganoff that will warm your stomach and delight your taste buds.
Ingredients
- 2 lbs. Stew meat – cut into cubes
- 2-3 cloves garlic – minced
- 2 onions – diced or minced
- 2 Tbsp. olive oil
- 3 cups beef broth
- 12 oz. egg noodles
- 1/2 cup sour cream
- 1/4 cup sherry – optional
- 1 1/2 tsp Worcestershire sauce
- 2 Tbsp. flour
- 1 Tbsp. fresh parsley – chopped
Directions
- Season your stew meat with salt and pepper to taste. Turn your pressure cooker to the highest sauté setting. Add your olive oil and brown the meat evenly on both sides, which will take about 3 to 4 minutes. Remove and set aside.
- Cook your garlic and onion until tender, or about 3-4 minutes. Whisk in your flour until the mixture is lightly browned, which will take about 1 minute. If you wish, deglaze the pressure cooker with your sherry and scrape up the browned bits.
- Turn your pressure cooker to a manual setting with high pressure. Add in your beef, beef broth, and Worcester sauce. Then cook for 12 minutes before using the quick-release pressure option.
- Add in your egg noodles. Set your pressure cooker again to manual high pressure, and cook for 5 minutes before using the quick-release option.
- Add in sour cream, season with more salt and pepper to taste. Serve.
2. Spicy Beef Stroganoff
This is a unique twist on a beef stroganoff that adds a spicy kick to get your taste buds dancing.
Ingredients
- 2 lbs. Stew meat – cubed
- 1 1/2 clove garlic – minced
- 2 onions – diced
- 2 Tbsp. flour
- 2 cups beef broth
- 12 oz. egg noodles
- 1/2 cup heavy cream OR sour cream
- 1/2 tomato – diced
- 2 Tbsp. butter
- 2 tsp cayenne pepper
Directions
- Set your pressure cooker on “sauté” and high. Season your meat with 1 tsp of cayenne, plus salt and pepper to taste. Brown in the pressure cooker for about 3 minutes, then take it out and set it aside.
- Add your garlic, onion, and tomato to the pressure cooker and cook for about 3 minutes or until onions are tender. Add in flour until browned. Deglaze with a splash of beef broth, and then lower to manual setting with high pressure.
- Add in beef, rest of sauce, remaining cayenne, and butter. Cook for 12-13 minutes, then release.
- Add in egg noodles. Cook for 5 minutes, then quick release. Finally, add in your heavy cream/sour cream. You may add in more cayenne to taste.
