Cook gently: Medium-low heat gives the starch time to swell without scorching milk on the bottom of the pan.
Cover the paste: Press wrap on the surface or cover the bowl so evaporation does not steal water from the formula.
Hold back liquid: Add part of the final dough water late if the dough already feels slack after the roux is mixed in.
Scale per loaf: For multiple pans, divide the cooled roux and final water evenly so every loaf proofs the same way.

Soft milk bread needs a lot of liquid to be plush once baked; bread dough can’t have endless amounts of water in it or else it will turn into soup.
