    💡Two Steak Timing Tips

    Probe through the side. Slide the thermometer horizontally into the thickest center. This avoids a shallow top reading and helps you compare pull temperature with final rested doneness.
    Separate crust from doneness. If the crust is done before the center, move to lower heat or indirect heat. If the center is close but the crust is pale, finish with a brief hard sear.

    How to Cook the Perfect Steak

    There’s one other variable that people overlook most: Thickness. Yes, all steaks is cut from the same animal, but a two-inch-thick tomahawk differs greatly from a half-inch skirt steak.
