Sea salt versus kosher salt: Kosher salt calculators often assume Diamond Crystal or Morton kosher density. Sea salt can be fine, damp, coarse, or flaky, so teaspoon math must use the crystal style you actually have.
Dry-brine practical note: A longer rest does not require more salt by itself. It gives the same salt more time to dissolve, move into the surface, and season the center of thicker cuts.
