    Keep salt separate from acid. In canned tomatoes, salt is optional for flavor. Bottled lemon juice, citric acid, or vinegar instructions come from the tested recipe and are not changed by this calculator.
    Measure by weight for specialty salts. Fine canning salt and table salt are close by teaspoon, but kosher and flaky salts can weigh much less in the same spoon.
    Low sodium is easiest at the jar. Use no added salt or a light dose in the jar, then season the opened tomatoes in the finished dish.
    Label added sodium clearly. The sodium result estimates added salt only; tomatoes naturally contain a small amount of sodium before any salt is added.
