Grill the prime rib requires patience but the results are worth the effort. Cook time depends on the size of the meat. First take it from the refrigerator at least 30 minutes before starting grilling.
For seasoning, keep the salt, pepper and garlic simple. Prime rib already has rich taste, so it does not need more than a good amount of salt and pepper. If you can prepare before, put salt at least a day before the roasting, or even four days, and leave it on a rack uncovered in the refrigerator.
How to Grill Prime Rib
Warm the grill to 350 degrees F for indirect warming. Switch the outer burners on high, while the center stay off. For 4 to 6 pounds of prime rib, count around 3 hours of cook.
The process lasts 15 to 20 minutes each pound, according to the wanted doneness and the kind of grill. Other calculations point to 12 to 14 minutes each pound. A bigger bit requires around 35 minuts each pound.
Lay the roast bone side down on the colder zone of the grill. Cover and grill for 1 hour 20 minutes to 1 hour 30 minutes for rare, or longer for more cooked meat. After one hour put a fast thermometer in the thickest part, not too near to the bones.
For medium-rare prime rib, grill for one and a half to one and three-quarter hours, until the meat reaches 125 degrees F. It will warm after removal from the grill.
It is more simple to keep the prime rib wrapped than to try to end it quickly. Count 4 to 4.5 hours, but check already in 2.5 hours. Do not cook according to time, but according to perfect temperature.
Pull it 10 degrees under the target for a smart result.
When the roast reaches the wanted heat, leave it rest around 15 minutes. This way the juices will disperse inside the meat. Covering with foil for 30 minutes works well also.
At 250 degrees on average warming it cooks prime rib in 5.5 to 6.5 hours. Low temperature and slow method gives equally cooked medium-rare meat. Sear the surface with high heat just before serving for crisp skin.
