    💡 Meat Resting Tips

    Pull temperature matters more than the clock. The rest timer should support your thermometer, not replace it. If a roast is already at the finished target, shorten the tenting or leave it uncovered so it does not overshoot.
    Slice close to service whenever possible. A whole roast holds heat and juices better than sliced meat. If you must pre-slice, keep slices loosely covered and pour board juices back over them.

    If you cut open a roast right away, what happens? Pressure escapes. Moisture leaks out of the meat. Now why would you want that? Because if you cut it open when the proteins is tight and under pressure, the juices will be pushed outward onto the cutting board, NOT back into the meat where they belong. Carry over cooking is something many cooks forget about until they have ruined their dinner. Roasts, especially dense ones, continue to cook even after they are taken out of oven.
