It’s one of those moments that makes you think maybe you’re doing something wrong: The recipe calls for half a cup of fresh lime juice and you’ve got four limes between your finger. It’s not big enough to derail the cooking process, but it’s there all the same. It is a tiny doubt, one that prevent you from proceeding with the meal. You slice the fruit in half and squeeze your knuckles raw, yet here are two tablespoon where the recipe demanded eight.
The trouble isn’t you. It’s always the fruit. Not all limes is created equal. Some are as small and fragrant as marbles (the kind sold at specialty market). Others are heavy and dripping with water (those you find at supermarkets, typicaly called Persian limes). Different limes will behave different, and thinking they won’t is to do them a disservice.
How to Get More Juice from Limes

It turns out that for most recipes zesting order does matter. For example, most instructions says “zest before juicing” since the zest has volatile fragrant oils in it. When you cut open the lime, some of the aroma evaporates off into the air or combines with the bitter white pith of the fruit. If you zest the whole thing, the fragrance stays confined. And the lime will be firmer, making it easier to work with.
If you expect to take a particularly generous pinch of zest, the calculator takes that into account and reduces its estimate of how much juice might result. The adjustment is small… But those lost teaspoons can add up when multiplying by ten for a pie recipe.
The other thing to consider is the pulp level. While pulp affects the texture, it does have volume and weight. You may pour out a cup of juice and notice it’s smaller than what came out of pulpy side. However, the amount of actual liquid in both containers will likely be the same.

A dried-out lime isn’t going to give you anything beyond what’s already inside.
