    Protect the cut face. Spiral ham and half ham dry out fastest where the meat is exposed. Put the cut side down when practical, add a small splash of liquid, and keep foil tight until the glaze step.
    Glaze by temperature, not just time. If the ham is still far below target, keep it covered longer. Start glazing when the center is close enough that the final uncovered window will not dry the meat.
