Balance fat with added solids. Pistachio paste, hazelnut paste, and chocolate add their own fat, so the cream percentage often needs to drop before the gelato tastes clean.
Stabilizer is tiny but important. Weigh stabilizer to the tenth of a gram when possible, then disperse it with sugar before heating so it does not clump.
Aging changes texture. Four to twelve cold hours gives proteins, gums, and cocoa more time to hydrate, which helps the gelato churn smoother and melt slower.
Fruit is mostly water. Purees lower dairy solids, so fruit gelato usually needs careful sugar, stabilizer, and milk-powder support rather than simply adding more cream.
