And then there’s the smell test, when you look in the fridge and notice something doesn’t smell right; but looks okay. What do you do? Toss it out? Keep it? It can make you indecisive. And while not wanting to make people sick is an admirable trait, most home cook operate from instinct alone, not data. Turns out our instincts are frequently wrong.

When we learn how time and temperature affect bacteria, it all makes sense. It alters our grocery shopping habits, our cooking habits, and our storage habits. It helps us turn our fear into a well-balanced set of checks and balances that ensures safety for our families. While preventing us from wasting perfectly good food by throwing it out too early.

How to Keep Food Safe in Your Kitchen

So how do we get back to the problem? It’s all about what microbiologists call the danger zone; those temps ranging from forty to one hundred forty degrees Fahrenheit where bacteria grow like mad. Under optimal circumstances they’ll double every twenty minutes. This is the reason it’s not wise to leave any perishables on the counter while working on that next recipe. Two basic rules: keep everything under 40 degrees in the refrigerator; and keep it no more than an hour at room temp before stashing it. That changes with a warmer kitchen environment, however. In that case, one hour max.

Below 40 and the bacteria growth slow down significantly. It comes to a screeching halt. Zero degrees in a freezer will also do the trick. Forty and zero are the biological lines between safety and danger. Other factors about storage environments are important: temperature is one, but how you store things matters too.

Dry goods, such as flour, sugar, pasta, cans of goods, and more all require a dry, cool, dark environment (aka your pantry). Exposure to heat and moisture will shorten their lifespans. And refrigeration? Refrigerators do reduce bacterial growth a lot, but won’t prevent it altogether. That’s why food has a limited lifespan after being cooked and stored. The freezer prevents growth entirely. It keeps food safe for months. However, oxidation and freezer burn can impact quality if food sits in the freezer too long. Freezing takes care of safety first and foremost. Texture is a close second. Packaging properley helps avoid freezer burn.

The quickest-spoiling item is protein, so be especially watchful here: Ground meats and raw poultry can be used/frozen within a day or two of buying. Pork and beef (whole cuts) will keep slightly longer in the refrigerator compared to ground meat. When ground, there’s an increased surface area exposed to bacterial contamination, which means it won’t stay safe to eat for as long. Fish is even more finicky, so attend to it immediately.

If you’ve cooked foods like soups and casseroles, cool them rapidly, then store covered in the refrigerator; these will last three to four days. The slower the cooling, the longer the food center remain warm, giving bacteria time to grow. Remembering when things went into the fridge takes a mental note, but dating labels will help keep on top of that clock.

Once you learn the signs of spoilage, they will be very apparent. Off odor; slimy texture on meats; visible mold. Then it’s time to toss! For hard cheeses, some individuals trim the mold and eat the rest. This is okay, as the mold does not reach deep into the cheese. For anything else that is soft, if there is mold, it should of been discarded completely. Mold roots go further than you can see, especially in soft foods. Never use cans that are rusty or damaged, such as those with a bulge. These can contain botulism. If you’re not sure, just throw it out.

• For food storage, select appropriate containers. Stainless steel canisters keep pantry dry foods protected from pests and moisture. Vacuum-packed foods last longer in the freezer because removing the air helps. This also locks in flavors and prevents freezer burn. Glass jars are long-lasting. They don’t retain smells or odors. They are great for heating leftovers in the oven. Rotate inventory (first in = first out) as part of your system. To cook safely, use a meat thermometer to check the internal temperature as part of a system. Older food gets rotated into use. It’s a no-brainer; not cumbersome at all.

Learning how food storage works isn’t about learning a bunch of numbers off a chart. It’s about learning the principles behind time management and temperature control. When you understand why heat helps bacteria grow, you quit guessing. You start confidently managing your kitchen. You will know exactly what you can safely eat and when to throw something else away. And that gives you peace of mind each time you prepare a meal or grab a snack.
