There’s no need for the hassle of wasted food if you learn how to make your cooler work for you. Because everything in there has thermodynamic properties, you need a plan to control those temps. This isn’t a matter of having fancy equipment: this is an exercise in controlling heat transfer. How you pack your goods will determine whether you have dinner.
When it gets hot, raw seafood and raw poultry goes bad first (check out a timing chart). The “danger” temperature range, above 40 and below 140 degrees Fahrenheit (is where bacteria grow rapidely). Once your cooler drops below the low end, pathogens will double every twenty minutes. That gives you about two hours if all goes well. In hot weather, however, that number becomes much smaller then.
How to Pack Your Cooler
For extended periods, use block ice as your foundation since it melts more slowly, but make sure to use crushed ice or packs to fill in gaps. Because there is less surface area exposed to warmer air, a block lasts longer. For a weekend outing, make blocks the base of your package. But blocks has open spaces that let warm air flow around. Those need to be filled with some kind of cold item (such as ice pack or crushed ice), so that food comes into contact with something cool.
In the most extreme cases, dry ice is choice, but treat with care: it’s cold enough to cause burns and shouldn’t be kept in a closed environment (carbon dioxide will accumulate).
Layering is essential. The coldest, heaviest items should of been in the bottom of the cooler. Raw fish and meat goes right on top of the ice layer and are double-bagged. This will protect against leakage into rest of the cooler contents and keep it coldest. Dairy products and pre-cooled meals stored in sealed containers goes on top of that. Next comes sturdy veggies & fruit. And lastly, beverages on top (you’ll be opening this door most).
Remember, when you open the cooler, you let warm air in and cold air out. Separate your drinks so you can get a soda without disturbing your dinner.
How much food? How much ice? When the air is mild and the trip short, an even balance between food and ice will do. If you’re heading out on a long trip or when it’s hot, you’ll want more ice: 2-to-1 ice-to-food ratio. All that added weight provide insulation against outside heat.
Pre-chilling your cooler before loading works wonders too. Sticking warm stuff in a cool-but-not-cold cooler burn up some of its cooling power. Don’t dump meltwater. Cold air doesn’t keep food as well as cold water. Unless it will leak or ruin other items inside sealed containers, leave the water where it is. It’s acting like a thermal blanket around your foods.
Use your senses and take a look at a thermometer to see if something has gone bad. When in doubt, throw it out. It’s not worth the potential of getting food poisoning just to save some money on meat that may have been sitting in a warm trunk.
Your cooler is a dynamic system. It need maintenance and attention. Restock ice when it’s gone. Monitor the cooler temp twice daily. Avoid placing your cooler directly in sunlight. Use it like an appliance rather than just a storage container. By planning ahead, you can be assured a cold, tasty, and safe meal awaits you upon reaching camp.
