Weighing makes the abstract notion of “strength” concrete, and you’ll be able to translate that into numbers you can put on your kitchen scale. Similarly, quick-flow brews like pour-overs want a little more coffee so as not to run out of flavorful compounds by the time the water flows through. Use the suggested standard for your particular device, make yourself some coffee, taste it, and then adjust accordingly to your perception. Too bitter? Try grinding slightly coarser. Too sour? Grind more finely and/or brew with hotter water.
