Start the timer at the right moment. For boiling water blanching, load the kale, press it under water, wait for active bubbling to return, then count the main blanch time. For steam blanching, count after steam is vigorous again.
Handle stems separately when texture matters. Thick ribs need more heat than leaves. Slice them thin and start them first, or remove them for a softer leaf-only freezer pack.
