apple cider is a soft drink made from apples. In the United States and Canada one calls it also sweet cider or soft cider. It stays unfiltered and without sugar.
The cloudy golden color comes from natural browning, similar to what happens when one bites an apple. Clear drink, through which one can see the bottom, is simply apple juice. The cloudy version then is apple cider.
What Is Apple Cider and How to Make It
Apple juice and apple cider both come from apples, but here end the likenesses. For apple juice one presses apples and filters the bits. It commonly gets added sugar, although there are unsweetened versions.
Apple cider has richer, more sharp taste than apple juice. Usually appel juice is sweeter.
Most of the apple cider stays unpasteurized, but some types pass pasteurization for safety. The USDA does not force pasteurization for apple cider or juice. Filtered and pasteurized cider simply becomes apple juice.
Freshly pressed apple cider can ferment on its own, because fermentation already involves the apples, just like with grapes. The alcoholic form is called hard cider in the United States.
Home making apple cider is fairly easy. One way involves slow cooking of apples with sugar, cinnamon and other spice on the stove until they soften, later one strains the mix. A second weigh takes apples, citrus, cinnamon sticks, cloves, sugar and water.
The resulting cider smooths after soaking of the fruit. It helps to taste before mixing in sugar.
For a big amount, lay the apples in a big pot, with orange, spices and brown sugar. Cover everything with water at least two inches high. Bring to a boil, later lower the heat and leave simmering covered for around two hours.

A slow cooker works well also. Cut dozens of apples with skins, seeds, stems and everything, later lay them in the slow cooker with spices and water. The bonus is that the home will smell amazing.

The kind of apples used for cider has a big role. A mix from different apple types is a good idea. Some old apple types were grown during centuries specially for hard cider.
Those apples are too bitter and sharp for eating, but give interesting drinks.
