Chicken Francaise has always been one of my favourite things to eat at a nice restaurant, just because of what a treat it is for the sense. When made right, it looks amazing, smells amazing, and oh boy it definitely tastes amazing. After having it so many times (and loving it more with each serving), I finally decided to try and make some at home too.

Now it’s one of my favourite meals to cook, and a reliable recipe when I need to serve something delectable to family or guests. Enough chit-chat from me. Let’s start looking at the recipe and what you’ll need to follow it. Start by gathering all these ingredients:

  • Chicken breast
  • 2 eggs
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 tablespoon of parsley
  • 5 tablespoons of cheese, shredded
  • 1/2 cup of all-purpose flour
  • 2 tablespoons of oil
  • 2 tablespoons of butter
  • 1/2 cup of chicken stock
  • 1 tablespoon of lemon juice
  • 1 tablespoon of garlic, chopped

Do you have everything on the list above? That’s great! Now just follow these steps to try my take on this delicious meal:

  1. Slice and Put Away The Chicken: Before you start cooking the meal, the first thing you need to do is to get the chicken breast and slice it in half. But, make sure you don’t slice it all the way through. Do it enough so that the chicken opens up and lies flat, but doesn’t split entirely. Then, you can set it aside while moving on with other things in the recipe.

  2. Make the Marinade: Get a deep plate, and break two eggs into it. Add 1 tablespoon each of salt and black pepper on top of the eggs, and ½ tablespoons of parsley as well. Lastly, add 1.5 tablespoons of shredded cheese on top. Now grab a fork and mix everything as well as you can. Keep stirring/whisking for at least a minute, so the ingredients properly blend together and the marinade is ready.

  3. Coat Chicken in Flour and Marinade: Now that you have the marinade ready, you can move on to the next step. Grab the chicken breast from the first step and coat it in ½ cup of all-purpose flour. Make sure that both sides of the chicken are completely covered. Once that’s done, you can dump the chicken into the marinade you made in the last step. The flour will make it easier for the marinade to stick to the chicken. Again, make sure that both sides are fully covered, and the sides too!

  4. Cook The Chicken: Put a deep pan on the stove and dump 2 tablespoons of oil inside. Then, add 1 tablespoon of butter to the pan and let it heat up until it starts melting. After that, you can add the chicken inside. Let both sides of it sit for 4-5 minutes each at the very least. Then, you can set it aside again. Just make sure to keep it somewhere suitable so that the chicken stays warm, instead of a colder environment.

  5. Combine Flavors: With the chicken warm and cooked for now, you can use the pan to prepare some extra flavoring for the chicken which will make it even more delicious. For this, add ½ of chicken stock to the deep pan, and top it with 1 tablespoon of lemon juice. Then, add 1 tablespoon of chopped garlic, followed by ½ tablespoons of parsley. Stir everything so it mixes well, and let the mixture cook for 2-3 minutes.

  6. Add Butter: Add a tablespoon of butter to the mixture you made in the last step. Let it cook for as long as it takes the butter to melt and blend in with the mixture.

  7. Add Chicken and Cook: Once the butter is melted, you can finally add the chicken to the pan again. Set it in there, and let both sides of the chicken cook inside the liquid mixture for 4-5 minutes each. Make sure that you move it with a wooden spoon during this time, so that neither side cooks too much in one spot.
