The physics comes from the fact that thickness dominates here. Most people think cooking begin once water reaches the desired temperature, and it does, but only after heat has conducted inside. The time it takes to heat depends on the square of thickness.
Doubling the thickness quadruples the heating time, because heat penetration scales quadratically with thickness. Twenty millimeters? Fast! Forty? Four times longer. Reducing thickness of your cuts decreases cooking time while preserving texture.
