The majority of so-called teas originate from exact same plant: Camellia sinensis. That includes both big, bold blacks and light, delicate whites. What makes each different isnt botanical at all; it’s chemicaly. It has everything to do with picking the leaves and then turning that single kind of leaf into half a dozen different types.
Each of these type requires its own set of brewing conditions. Knowing the difference will help you treat your tea with more care. Why? Because of oxidation. After tea leaf is picked, it react with oxygen as enzymes within the leaf do. Think about when you cut an apple, it start to turn brown.
How Different Teas Are Made and Brewed
Very little processing occur during white tea production. All that happens is leaves are dried and withered. Because they aren’t handled much, their naturaly sweet flavor remains intact. You get a pale, floral drink with less caffeine.
Green tea goes in different direction. Right after being picked, the leaves is heated. They won’t continue to oxidize anymore. This creates that bright green hue and keep the fresh flavors locked in. Full oxidation results in black tea. Leaves turn completely black or dark brown. Robust, malty flavor come out that match perfectly with milk. That explains why black tea remain the dominant type consumed around the world. It is bold and pleasing to everyone.
Moving beyond this, pu-erh takes another step: adding fermentation. These teas are not just aged but often compressed into cakes. Over time, microbial culture develop and give these teas their deep, earthy flavors. Collectors speak of these teas as if they were fine wine. They age and becomes more valuable along the way.
For the home brew enthusiast, mastering each style take some practice. The gist of it all is control. Green and white teas are delicate and require cooler water. Water usually falls between 160… 180 degrees Fahrenheit. Boil them? That scalds those tender leaves and releases tannins. Tannins give tea bitterness. They ruin the subtle flavors you’re attempting to draw out.
Black tea and pu-erh benefit from nearly boiling water. Their tougher cell walls breaks down from the heat, which unleashes their full body. Weak black tea? Use warm water on that stuff and you’ll be under-extracting a robust ingredient.
Oolong, while a bit more lenient in terms of what it can handle, will respond well to higher temperatures (if it’s highly oxidized) or lower temperatures (greener in profile).
True teas vs. Tisane: True teas come from Camellia sinensis plants. Peppermint, chamomile and hibiscus do not. These herbal infusions, or tisanes, is their caffeine-free cousins. While providing some healthy benefits (from aiding digestion to relaxing) these brews don’t adhere to the same oxidation rules of true teas. But they still require good brewing care.
The water temp can be less strict but that’s important, too. Treat your ingredients with the respect they deserve. Is it an Assam black or a Silver Needle white? It doesn’t matter; what does matter is that both the leaf and water gets along.
To maintain that balance, proper storage is essential. Because tea leaves are hygroscopic (they absorb smells and moisture), storing them in a cool, dry place out of direct sunlight will help retain flavor. A air-tight container is also necessary. Generally speaking, green teas don’t keep as long. Many reach their peak after one year. Aged pu-erh and black teas tends to last longer. Storage is a no-brainer, yet goes a long way.
In short, tea requires precision and patience. If you honor where the leaf comes from and how it was processed, the deeper notes comes out. From field to pot, this process is a lengthy one, but worth the taste found in every sip.
