💡 Blanching Tips

Start the timer at the right moment. For boiling water, count blanching time after the water returns to a vigorous boil. If that takes more than a minute, lower the batch weight or add water.
Do not skip the cooling step. Move vegetables into cold water immediately, cool for about the same length of time as blanching, then drain until surface moisture is gone.
Keep freezer batches conservative. Underblanching can leave enzymes active, while overblanching softens texture and can reduce flavor and nutrients.
Sort by size before you blanch. A mixed batch of thin pieces and large pieces forces a compromise; separate sizes make the chart times more useful.
