How to Use Russian Piping Tips

Too soft of a buttercream will cause the petals to merge together into one large mass of frosting. Too stiff of a buttercream will clog the Russian piping tip. The medium consistency buttercream work best with Russian piping tips to pipe roses.

A medium consistency buttercream is one that forms a soft peak when stir. For flowers that have tall petals, use a stiffer buttercream. For flowers like grass or swirls, use a softer buttercream.

One type of decorative flower that can be made with a Russian piping tip is a rose. To pipe roses, utilize a broad open star shaped Russian piping tip that creates eight wide petals with ruffles. To pipe the flowers with the Russian piping tip, hold the tip at a ninety-degree angle to the cake so that it makes contact with the cake surface.

Use even pressure when squeezing the piping bag to pipe the flowers. To pipe flowers on the side of a cake, tilt the piping bag to a forty five degree angle. Additionally, a person can also vary the size of the flowers by varying the amount of pressure applied to the piping bag.

Using less pressure will produce small bud of icing, while applying more pressure will create large, ruffled flowers. Many problem can occur when utilizing Russian piping tips. However, there are solution to each of these problems.

For example, if the petals of the flowers are merging together when piped, chill the buttercream. Chilled buttercream will be firmer. If the Russian piping tip is clogging, sift the powdered sugar or roll the piping bag upward to remove the air bubble from the buttercream.

Additionally, if the buttercream is too stiff to pipe flowers of the desired size, add small amount of cream or corn syrup to the buttercream to allow the flowers to be piped more easily. Finally, if air bubbles appear in the buttercream, twist the top of the piping bag to ensure that air bubbles do not enter the Russian piping tip through the Russian piping tip. A person can also use different color of frosting to make the flowers look more realistic.

For instance, use pink frosting to create roses and use green frosting for the leaves. Additionally, to create a gradient effect in the flowers, place stripes of different color of frosting along the seams of the piping bag.
