Frozen yogurt is a frozen dessert made with yogurt, sometimes with dairy and other products. It has the same ingredients as ice cream, but adds live bacterial cultures. Basically it is made of yogurt instead of milk and cream, although it is possible to make it only from pure yogurt.
The taste usually tends to be tart, especially in fruit or plain flavors. Tastes like cheesecake, cake batter or chocolate are less tart but not as rich or flavorful as ice cream. Sweetness can fade after freezing, but the tartness stays.
Frozen Yogurt: What It Is and How to Make It
That is worth recalling during home preparation. Lemon juice helps to balance the tastes.
Frozen yogurt has less fat and more water than ice cream. Even so that water can create probelms. While freezing the free water molecules join and create ice crystals, that makes it gritty or grainy.
Sugar helps to stop the crystal formation. Full-fat yogurt is less likely to become a hard block after freezing. Adding rich ingredients like cream, labneh or mascarpone gives a more luxury and rich result than only yogurt.
Full-fat Greek yogurt is a must for good results. A base from cream, milk and stabilizers, that you heat and later cool, works even better. Invert sugar or simple syrup is the simplest and cheap way, if you want fewer calories by using allulose.
Strained or Greek yogurt you can swap cup for cup with whole-milk yogurt in recipes.
Homemade frozen yogurt works with only three ingredients: frozen fruit, Greek yogurt and honey. First mix yogurt with honey, later add fruit and blend briefly to have nice fruit chunks. Popular tastes are mango, raspberry, chocolate, passion fruit and strawberry.
Passion fruit frozen yogurt surprisingly goes well with pistachio ice cream. Tart frozen yogurt with fruit toppings and toasted coconut forms a wonderful combination. Honey with diced fruit and granola also work well.
Greek frozen yogurt with crushed baklava and honey or sour cherry jam is worth a try.
Without an ice cream machine you can make frozen yogurt, but it takes time. Only freezing yogurt itself gives a hard block with plain tastes, typical for Greek yogurt, not the creamy dessert from stores. A few spoons of honey create a much softer texture.
Frozen yogurt has fewer calories and less fat than ice cream, although low-fat ice cream is similar innumbers.
