Vinegar from apple cider is made by fermenting apples together with yeast, which produces sharp acid and that typical taste that puckers the mouth. The flavor is like that of apple cider only with a sharp kick that works especially for various sauces and fried foods. The word “vinegar” comes from the French terms for “sour wine.”
One interesting fact that one must know is “the mother”. This is that round collection at the bottom of unfiltered vinegar from apple cider, that is made up of strands of yeast and bacteria, forming during the fermenting process. One considers it good for health, although its mainstream value yet is not entirely proved by scientific studies.

The mother appears when unfermented sugar stays in the final product, much like the SCOBY in kombucha. Some brands remove it by screening, but the raw, unfiltered types keep it in every bottle. Those clumps are entirely safe to consume.
Vinegar from apple cider has a vitamin profile similar to that of apple juice. It stores traces of elements, minerals and various vitamins, among them sodium, calcium, magnesium, phosphorus, all B-vitamins, vitamin C, E and K. Especially it is rich in potassium. One serving is made up of one spoon, around 15 grams, and it has barely any calorie.
Vinegar helps too strengthen the feeling of fullness. In some short-term studies, the intake of apple cider vinegar together with a meal full of solid foods caused holding back of hunger during 120 minutes after the meal. One study from 2009 shows, that one or two spoons daily during three months helped overweight people lose average 2,6 and 3,7 pounds.
Yearly study also shows, that it can control the level of blood sugar, lower swelling and increase the amount of good bacteria in the bowels.
Even so it is sour. The heavy intake of sour foods can weaken the enamel of the teeth over time, which could lead to decay. Rinsing of the mouth after drinking is clear good sense.
Best to dilute it instead of drink directly, because it can upset the stomach. Best start with a small amount and later expand.
In the kitchen apple cider vinegar shows itself very useful. It works well for coleslaw, salads, marinades, pulled pork and braised meat. While one boils slowly soy sauce, adding a bit of it can cut the extra salt and give a hint of sweetness.
In Chinese meals and stir fries it can replace white vinegar. If apple cider vinegar runs out, white vinegar from rice wine is the best replacement. Also whole wheat bread benefits from adding it, because the slight sourness brings out thenutty taste of the wheat.
