Grated cheese simply is cheese that one rubs against a grater to dig it in many tiny chips. Cheeses that are hard, for instance Parmesan, usually one grates, and that can improve their taste. Grated cheese shows more surface.

Freshly grated cheese stays fresher and has better taste. Pre-grated Parmesan from a supermarket sometimes is not even real Parmesan, but imitation, that is much less good. In 2016, a survey by the FDA about Castle Cheese Inc. Found, that the brand used wood pulp in its grated cheese products.
One sued companies because of false claims of “100% Grated Parmesan Cheese.”
One can freeze blocks of Parmesan. Digging a section from it and grating with a simple grater works well. Only disadvantage is, that frozen cheese does not cut in nice bits.
Freezing helps to also control waste, because freshly grated cheese does not have anti-clumping extras.
Mixing Parmesan and Romano forms a popular combination. Who finds Parmesan too mild or Romano too strong, that can mix the two. Food stores even sell them pre-mixed and grated.
