Wheat is a group of wild and farmed grasses. They belong to the genus Triticum and people grow them because of their cereal grains. Those grains are basic foods around the whole world.
Between the most known kinds are average Wheat, spelt, durum, emmer and einkorn. Wheat is a member of the grass family that gives dry, one-seed fruit called a kernel.
What Is Wheat and How We Use It
Folks grow Wheat already for thousands of years. People think that its use as everyday food helped the growth of civilizations in Europe and in parts of Asia and Africa. It is one of the oldest and most important cereal crops.
Globally people grow Wheat on bigger land area than almost any other crop. North Dakota leads the country in its farming. American farmers plant around 50 millions of acres of Wheat, providing food for hundrdes of millions of folks home and abroad.
People use Wheat to make bread, pasta, cakes, biscuits, cookies, pies, flour and lot more. It is also an important ingredient in porridge, muesli, pancakes, noodles, cakes, pizza, semolina, doughnuts, sauce, beer, vodka and breakfast cereals. Because of that it appears in many everyday foods.
White Wheat was the main kind grown in Australia for many decades. In United States, types of white Wheat were developed during the 1970s and 1980s by means of cross farming of lines of red Wheat. Genetic improvement went more slowly with Wheat because of its complex genetics and because of lower possible profits from research.
American food makers are careful about the reactions of consumers too products that carry genetically modified Wheat, so farmers grow Wheat mostly for human food use.
Wheat is the only cereal that carries proteins forming gluten, called gliadins and glutenins. That includes types like durum, spelt, emmer, einkorn and khorasan. About one percent of folks has celiac disease or other important problems with gluten.
Products with gluten are one of the biggest sources of ultra-processed foods, like pies, cakes, breads and cookies. They are also an important source of simple carbohydrates.
Modern Wheat comes from a type called dwarf Wheat, created for durability and high harvest. Ancient grains like einkorn are much better handled by some folks. Even so there is no clear scientific agreement that Wheat entirely is bad.
Wheat berries are a whole grain choice with a bit sweet, nutty taste and chewy texture. To cook them can take up to 50 minutes or even more. They work in almost any recipe where you would use farro, because both are kinds of Wheat.
Spelt and emmer are kinds of farro, an ancientWheat grain. Bread from whole Wheat flour is healthier than bread done from fancy flour. Blending of 70 percent of white bread flour with 30 percent of whole Wheat flour gives a more lightweight loaf.
Pure whole Wheat can push bread too heavy and dense.
