Ingredients
Like I said already, this recipe isn’t heavy on the wallet. Most things on the ingredient list is stuff you should already have, and all of it is just simple ingredients you can find at any nearby store. So, take a look at what you have from these things and gather them all before we start cooking:
- 4 sausages
- 2 tablespoons of oil
- 1/2 cup of onions, chopped
- 1/2 cup of bell peppers, chopped
- 1 tablespoon of minced garlic
- 3 cups
- 3–4 oz of tomato paste
- 2 cups of chicken stock
- 1/2 teaspoon of black pepper
- 1 teaspoon of kosher salt
- 1 teaspoon of onion powder
Instructions
Well, it may be light on the wallet, but my red rice with sausages recipe definitely isn’t light on the stomach. Follow what I’ve listed below to make a tasty and filling meal in under an hour with just a few easy steps!
- Soak Some Rice: To start off, get a bowl and soak 3 cups of rice inside of it. That’s the first and easiest step done with already! You can set the rice aside while focusing on other things until it’s ready.
- Cut and Fry Sausages: Get 4 sausages and start cutting them up into little pieces. Now put them in a large pot and fry them inside of 2 tablespoons of cooking oil. Keep cooking them until you notice a change in the color of each sausage, which should happen in just a few minutes.
- Add Rice and Other Ingredients: After the change in each sausage’s color happens, you can start adding other ingredients to the pot. This includes ½ cup of chopped onions, ½ cup of chopped bell peppers, 1 tablespoon of minced garlic, and 3 cups of soaked rice, all of which need to go into the pot and mixed well.
- Add Tomato Paste and Cook: With most of the other stuff from my ingredient list already in the pot, it’s time to dump 3-4 oz of tomato paste inside. Now just cook everything for 3-4 minutes on medium heat, while making sure that you stir regularly the whole time. That way, the paste and all the other ingredients will gel well together so that the flavors combine.
- Add Remaining Ingredients and Mix: Good news! You’re almost done with the recipe, which means you’re all that closer to enjoying a delicious meal! The last big step is to add the rest of your ingredients to the pot. This means you need to throw 2 cups of chicken stock in there, followed by just ½ teaspoons of black pepper and a single teaspoon of kosher salt. Also add 1 teaspoon of onion powder for extra flavor.
- Mix and Cook: Okay, everything’s in the pot! That means you can just mix it all together one more time and cover the pot up. Then, cook it for about 10-12 minutes, and then start stirring it with a wooden spoon after that time goes by. You’ll want to stir on low heat for as long as it takes the mixture to get noticeably thicker than it was when you started stirring. It shouldn’t be runny at all, but instead of a creamy, thick texture.
Notes
- Once you’re done with all that, the recipe is over! You can enjoy your delicious red rice with sausage, and impress others with it too! It’s a quick, delicious, homey, and neat looking meal that you can make up with simple ingredients.
- That basically ticks all of my boxes for a nice comfort meal, which is exactly why I shared this recipe with you today! All I want to say now is that I hope you enjoy your meal.
