Everyone loves a good burger, don’t they? It’s one of the best foods out there. It fills you up, tastes delicious, and hits just the spot when it’s made to your liking. A good homemade burger is especially great, because it just has that feel to it that fast food burgers don’t. At least, that’s what I think.
If you’re like me and prefer a good homemade burger made with love compared to something bought from restaurants, you’ll love the buttermilk recipe I’m going to share here today. It’s loaded with chicken, vegetables, spices, and so much flavour that your taste buds will thank you for every bite you take. So, let’s get cooking!

Ingredients
You’re going to need a bunch of different ingredients to prepare the chicken just right, and give your burger the flavour it needs to blow everyone away. Here’s what those ingredients are, and how much you’ll need of each one:
- 250 grams of chicken breast
- 2 cups of milk
- 1 teaspoon of vinegar
- 1 tablespoon of dried rosemary
- 1 tablespoon and 2 teaspoons of paprika powder, separate
- 1 1/2 teaspoons of chilli powder
- 1 tablespoon and 2 teaspoons of salt, separate
- 1 teaspoon of onion powder
- 2 cups of all purpose flour
- 1 1/2 teaspoons of cayenne chilli powder
- 2–3 cups of cooking oil, as needed
- Burger buns
- Burger sauce
- 2–3 onion rings, as desired
- 2–3 tomato slices, as desired
Instructions
Making a great burger takes skill, but it isn’t difficult. Following the right steps, you can do it easily. So, I’ll be guiding you throughout each step in detail, and you can do just as I say to be done with the recipe from start to finish! Start by…
- Make Chicken Fillets: You need to prepare the 250 grams of chicken breast into fillets for the burgers, so let’s start by doing that before anything else. Get the chicken and place it on a cutting board. Cut the piece in half from one end to another, and then cut each half into another half horizontally. That way, they’ll be thin and just the right size for a burger.
- Stab The Fillets: Just get a fork and stab each piece multiple times all over. This is a neat little trick I use for seasoning meat better, since it really makes the flavour set in during the cooking process. Just make sure you don’t overdo it and split up the fillets by stabbing them too much or too hard. You can set these aside for now.
- Start Preparing Buttermilk: For now, shift your attention to preparing the buttermilk that the chicken will be covered in. Get a shallow bowl and add 2 cups of milk inside. Top this with 1 teaspoon of vinegar, and mix the two as well as you can.
- Add Additional Ingredients and Mix: Add 1 tablespoon of dried rosemary to the milk bowl from the last step, along with 1 tablespoon of paprika powder, 1.5 teaspoons of chilli powder, 1 tablespoon of salt, and 1 teaspoon of onion powder. Mix all of these together until you can tell they’re blended with the milk.
- Dip Fillet in Buttermilk: Get the chicken fillets that you set aside earlier and dip them inside the buttermilk mixture you just made. Make sure that they are completely coated and soaked in the mixture, and that all sides are covered. Set the pieces aside again while they’re covered by the buttermilk.
- Make A Flour Mixture: To really give the chicken a nice coating of crispy goodness, start preparing a flour mixture while the fillets are set aside to ready. Get 2 cups of all purpose flour and top them with 2 teaspoons of paprika powder. Then, add 1.5 teaspoons of cayenne chilli powder and 2 teaspoons of salt. Stir all of this together and the flour mixture will be ready.
- Coat The Fillets: Since the flour mixture is ready, you can coat the chicken in it. Get the chicken out of the buttermilk batter and coat it in the mixture. Kneed the flour into the fillet as well as you can, and then dip it again in the buttermilk. Now take the fillets out of the buttermilk yet again to put them back in the flour. Each fillet piece should have two coats like this for it to really set in.
- Cook The Fillet: Grab a deep pan and add 2-3 cups (depending on your need) of cooking oil to it. Let this preheat for a while before adding the chicken fillet pieces inside. Fry each of the filets for 13-15 minutes, or until they’re done. Make sure that you keep flipping the fillets regularly during this to avoid any kind of burning or overcooking on either side. During this, you can focus on the next step too.
- Craft The Buns: While the chicken fillets are frying, keep an eye on them and start working on the buns if you would like. Get a flat pan and add 2 tablespoons of cooking oil to it. Preheat for a while and then toast the burger buns on low or medium heat. Flip them regularly so that they don’t burn.
- Bring It All Together: Add sauces to your burger as you prefer, and then add lettuce, onion rings, tomato slices, and more as per your taste. Then, once everything is ready, you can put the chicken fillet inside and serve the burger immediately!
