Ingredients
Scale
As I already mentioned, there aren’t many ingredients in the recipe. You only need a few things to prepare this, which I’ve listed here:
250 grams of liver
1 cup of milk
1 1/2 cups of all purpose flour
2 teaspoons of black pepper
1 teaspoon of salt
3 tablespoons of butter
5–6 onion rings
1 teaspoon of vinegar
Instructions
Got all the ingredients you needed with you? That’s great, because it means we can finally get started with the recipe! I’ve listed all the steps you need to follow in full detail, starting with…
Prepare The Fillet: First of all, you need to make fillets with the 250 grams of liver. To do this, start by slicing the liver in half horizontally, which will make two fillets. Then, get a large bowl and pour 1 cup of milk inside it. Now just place the two slices you cut up into this bowl and set it aside for some time so that it can be ready for use later while you focus on other things.
Make The Flour Mixture: You will need to coat the fillets with a flour mixture, which is our next step. To do this, you need to get a shallow plate or a deep bowl, and toss 1.5 cups of all purpose flour inside. Now top this with 2 teaspoons and 1 teaspoon of black pepper and salt respectively. Get a spoon and move these ingredients round a little bit so they’re mixed.
Coat The Fillets: Since you’re done with the mixture, the fillet should have had enough time by now to be ready for use. Take both pieces out of the milk bowl and set them aside on paper towels. Pat them dry as well as you can, and start coating them with the flour mixture you prepared in the last step. Make sure that all sides are completely covered.
Cook The Onion Rings: You’re done with the liver for now, so you can focus on the onions that’ll company it instead. For that, you will need a deep pan. Heat up 1.5 tablespoons of butter inside the pan until it starts to melt and let it spread all over the surface. Then, add 5-6 onion rings inside (or as many as you would prefer, like I discussed earlier). Cook these for 3-4 minutes at least, and flip them regularly to make sure neither side burns and they’re cooked equally.
Add Vinegar and Cook: After you cook the rings for a while, they’re gonna be noticeably more brown now than they were at the start. When this change in color happens, add 1 teaspoon of vinegar in the pan and make sure that the rings are mixed well with it. Then just cook everything for 1-2 more minutes and take it out of the pan. Set the rings aside for now, but make sure to place them somewhere they will stay warm instead of cold environments.
Cook The Fillets: Now it’s time to cook the fillets, since your onions are ready. Get the same pan you heated up the onions in and add another 1.5 tablespoons of butter. Let it heat up until it melts and covers the cooking surface. After that, you can add the liver fillets and cook each of them for 4-5 minutes. During this, make sure to flip each side over when necessary so they’re equally cooked. Then, just cover the pan and let the fillet cook on slightly lower heat for 7-8 minutes.
Notes
Liver recipes tend to be complicated, which is another reason why some people don’t like them. But, as you can see above, there’s nothing special you need to follow this one.
Everything is easy to find, and you will probably already have it in your kitchen. There’s no need to substitute any ingredients or struggle to find replacements, which I know is a big relief for many people.
The only thing I would want to add is that you are free to use more onion rings if you want, or even less of them. Some people love onions and some aren’t big fans of them, so depending on your preferences you can use more or less.
