Minimal basic instructions, and the usual cook tables, but probably not the FIRST book I would recommend for novices. It is certainly a great cookbook once you feel comfortable with pressure cookery in general. Has especially good sections on seafood, vegetables and grains, but not very big on soups or casserole type recipes. Recipes are different from the run of the mill stuff and most recipes come with several variations so you really get a lot of recipes. For example there is a recipe for Beef and Vegetable Casserole with variations for Tomato Pot Roast, Sweet Potato Pot Roast and Chili pot Roast with Beans.

Reviewer's Comments: About 1/2 of the book is dedicated to explaining the art of pressure cookery for beginners and novice cooks. There are plenty of diagrams and pictures with arrows and directions, so this would be an excellent starting cookbook for anyone new to pressure cooker. The recipes are fairly simple and commonplace, nothing to write home about on that point. As in other books by this author there is a Mediterranean flare to many recipes. He also includes a regular stove top version with many of the pressure cooker recipes.

Reviewer's Comments: The recipes in this cookbook are in a word - different. Recipes are French and perhaps use ingredients that are not commonly found in the American kitchen, or appeal to our tastes either, but if you're looking for something out of the ordinary this cookbook has it. Unique recipes for Stale Bread Soup, Eel in Muscat, Roast Wild Boar are a bit exotic, but there are plenty of meat, stew and soups recipes that look appealing. Large sections on fish, vegetables, but rather weak in beans, rice and grains. One of the things that struck my about this book was the numerous spelling and grammar errors, maybe something was lost in the translation from French to English? Also the little filler graphic are just awful and the author should have omitted them.

This book has clear instructions and the recipes are not very complicated, just regular home-cooking type food for the most part. There are not many recipes for beans and no one pot or casserole recipes. I would say that most of the recipes, or ones very similar, can be found any place else on the web. There is very little help for beginners, not even the usual time charts, so if you aren't already familiar with pressure cooking this book won't be much help. This book has many photos, but they are "artsy" photos, very blurred and out focus and do nothing to show what the finished recipe would look like. The recipes are only one to a page so there is a lot of wasted space.
