THE PANS

Many of my recipes call for the use of insert pans will fit inside the cooker. Metal pans work best because they conduct heat better and faster and may even create a light crust. Stainless steel is the first choice as it will not react with any food. Decorative copper and tinware molds are excellent for adding a decorative shape to steamed cakes. Aluminum pans may be used, but they may react to certain ingredients. If using a decorative glass, ceramic or porcelain mold you will need to increase cooking times by an additional 10 to 20 percent depending on the thickness of the container. I
